Le Marche Apple Torta (Torta di Mele)

This simple to make torta uses extra virgin olive oil rather than butter.  To the original recipe, I have added some cinnamon which is normal for American tastes, but not for folks in Le Marche.  You could try it without the cinnamon if you wish.  This is a very typical Italian cake, a little dry but loaded with good flavor. Served on a bed of caramel sauce or with a scoop of vanilla ice cream, it would be perfect.  It is a perfect breakfast cake or a great accompaniment to a cup of coffee or tea or orzo.  If you are not familiar with orzo, it is a very popular coffee alternative here in Italy that has no caffeine.  It is made from roasted barley, and for anyone who can not drink caffeine is a wonderful coffee substitute. 



Ingredients
3 eggs
1/2 cup of whole milk
1/4 cup of extra virgin olive oil
3/4 cup of sugar
2 cups plus 1 tablespoon of flour
zest of one lemon
2 apples peeled, cored and thinly sliced
2 teaspoons baking powder
1/2 teaspoon cinnamon

Equipment
Electric mixer
9 inch spring form pan greased and floured (you can use olive oil for this)
Oven preheated to 350 F or 180 C

To Make the Torta

Step 1:  Peel and core 2 apples and slice them thin.  Set aside.
Step 2:  In a large mixing bowl, beat  the sugar and 3 eggs with an electric mixer for  approximately 2 minutes.
Step 3:  Add the olive oil and milk and mix to incorporate,
Step 4:  Add the flour, baking powder, cinnamon, and lemon zest and mix to incorporate.  Do not over mix.
Step 5:  Pour the batter into the prepared spring form pan.
Step 6:  Arrange the thinly sliced apple slices on top of the batter.
Step 7:  Sprinkle the top with 2 teaspoons of sugar and a sprinkling of cinnamon to taste.
Step 8:  Place the torta in the center of the preheated oven and bake for approximately 35 to 40 minutes until a cake tester comes out clean.
Step 9:  Remove the torta from the oven and let cool for 15 minutes.  Remove the sides of the spring form pan.  Let the torta cool completely before transferring it to a serving platter.
